Black Bean Salad



1 can black beans, drained and rinsed

1 can corn niblets, drained

1 red pepper, chopped (size similar to beans)

½ cup chopped celery

2 green onions chopped

1 cup feta cheese, crumbled

¼ cup chopped fresh cilantro ( or more)

Dressing

3 T olive oil

3 T white wine vinegar or Kress white vinegar

2 tsp Dijon mustard

¼ tsp each salt and pepper

1 clove garlic, minced or crushed

Method
In medium bowl combine all salad ingredients.  Whisk together

dressing ingredients and toss with salad just prior to serving.
